A classic comfort food recipe lightened up by using ground turkey. No hassling with cabbage leaves, yet all the flavor that makes this dish a classic comfort food. Less work and less fat, but all the comfort and flavor.
2 pounds ground turkey
1 swirl around the pan with your olive oil
1 onion, chopped
2 cloves garlic, minced
2 1 0 oz bags pre-chopped cabbage (Trader Joes)
2 14 oz cans diced tomatoes
2 8 oz cans of tomato sauce
1 can tomato soup
1 T vinegar
1/4 c brown sugar
1 small can of beef broth
salt and pepper
Trader Joe's sells pre-chopped cabbage that works perfectly in this recipe. I used two 10 oz bags for this dish.
Cook onion and garlic in olive oil until translucent.
Add ground turkey and cook until it’s longer pink. Drain off any fat before continuing with the recipe.
Add cabbage, diced tomatoes, tomato sauce, tomato soup, vinegar, brown sugar and beef broth.
Season with salt and pepper.
Bring to a boil and turn down to a simmer on medium low. Cook for 30-45 minutes. The goal at this point is to reduce the amount of liquid in the mixture in order to bring the flavor out. Serve over hot rice.
