Spaghetti Squash with Turkey Meatballs

Plus a recipe for Baked Spaghetti Squash with Turkey Meatballs - {perfect for Leftovers}

Here’s what you’ll need for the first recipe:

1 spaghetti squash

1 pound ground turkey

1 egg

1/2 c grated parmesan

1/2 t dried oregano

1/2 t dried basil

1/4 t sea salt and -> black pepper - a few cranks of the handle

1 jar of your favorite spaghetti sauce


Preheat oven to 350 degrees

First - The Meatballs

Place oregano, basil, 1 egg, parmesan cheese, salt and pepper in a large bowl

Combine to make a paste

Add ground turkey and combine mixture by hand.  

Make 12 meatballs by hand and place on a greased cookie sheet

Bake meatballs for 20 minutes or until lightly browned.  Remove to paper towels to drain excess grease and then place into spaghetti sauce in a pan on the stove and keep on low heat.  Allow to simmer while spaghetti squash is cooking.

Second - The Spaghetti Squash

Slice spaghetti squash in half; scrape interior and remove all seeds with spoon

Place spaghetti squash face down on large baking sheet sprayed with Pam and add ½ cup water to pan.

Cook spaghetti squash for at 350 for 45 minutes.  Using a fork, remove cooked squash from rind and place iton a individual serving, pasta bowl.

Ladle meatballs and sauce over squash and serve

Refrigerate unused portions of squash and sauce separately.

Second Recipe - Baked Spaghetti squash with Turkey Meatballs

This is so good!  You may even want to go straight to this baked version.  The only change would be to add an additional egg or eggs (your call) to entire portion of baked spaghetti squash before moving on to add sliced meatballs and sauce; prior to baking.  The following recipe is down-sized to accommodate a single leftover serving.

Usually, you’ll have one full serving of leftovers from the first recipe.

All you will need in addition to the leftover sauce and squash is:

One Egg

Add the egg to cooked spaghetti squash and combine

Slice the leftover turkey meatballs into bite-size pieces.  

Combine turkey and sauce with squash-egg mixture and place in a greased baking dish

Bake at 400 for 30 minutes

Using a fork, break up the baked mixture a tad before placing into your pasta bowl - Enjoy!
