A wonderful dish to celebrate the arrival of Spring! Fresh Peas, Fresh Mint and Crisp Proscuitto in a Crème Fraîche Sauce.
Cook pasta according to package directions. While pasta is cooking, in a large skillet cook prosciutto until crisp. Remove to paper towel to drain. Add olive oil and shallots to pan and cook until just slightly golden. Add peas and chicken stock. Turn down heat and cook at low for 10 minutes.
Add entire container of Crème Fraîche and fold into broth.
Add parmesan reggiano cheese, mint and proscuitto. Salt and pepper to taste. Stir gently to combine.
Add cooked pasta to the pan and toss. Serves: 6
Cooking Time: 30 - 40 Minutes
