Over the last couple of years, I’ve made huge strides in eliminating preservatives and refined foods from my diet. I’ve replaced the junk with real food and a daily green juice. A few years back, I started Hiking along with Pilates, Yoga and Barre classes and wow, talk about feeling great and looking a helluva lot better - this formula has definitely worked for me.
I need a little pre-workout protein and as much as I love bananas, I also like a little variety in life. This recipe I’ve put together for these protein balls came as a result of a low blood sugar situation that I experienced at the very beginning of a recent hike. Live and Learn. I realized that for me, it’s important to kick up my blood sugar naturally before and during the hiking process. This was the motivation behind creating this recipe.
The journey to eat and live well continues, as I’m always looking for and trying new recipes and natural products to support my healthy lifestyle. A few months ago, I discovered Lara Bars. These are preservative-free protein bars that are absolutely fabulous, but at nearly $1.50 each - they can add up after a while. I am a huge fan of the ‘Peanut Butter Cookie’ Lara Bars and these will still end up in my shopping cart, but to shake things up a bit and save some green, I came up with a protein ball recipe of my own that actually tastes great. I’ve included a link to the protein powder that I use in this recipe just so that you can see how amazing it is. Enjoy!
2 Tablespoons Plant Fusion brand unflavored protein powder
1/2 cup salted, creamy almond butter - I used Trader Joe’s Brand
8 pitted and chopped medjool dates
1/4 cup shredded, unsweetened coconut
1/4 cup raw, whole almonds
2 Tablespoons raw, unfiltered honey
1/4 teaspoon cinnamon
1/2 teaspoon vanilla
In a food processor, combine all of the ingredients and pulse until the ingredients are well incorporated - that is, just until the mixture starts to clump together. Don’t worry if the mixture has separated a bit, it will still roll together nicely into single serving pieces.
Remove the mixture from the food processor and roll into a walnut-sized ball with your hands. Store in Refrigerator.
Yield: 16 servings
