I experienced Miso for the first time during a trip to Japan. It’s become a staple in my own culinary repertoire back home in California. I use it often when making soup. What is Miso? It’s a paste made from fermented soybeans, and because it’s fermented, miso is loaded with probiotics and antioxidants. Miso is also made from chickpeas, azuki beans and grains. Here, we’ll be using Miso as the base for our salad dressing. It’s such a simple recipe. You’ll mix maple syrup with Miso for a very, subtle sweetness that lends itself perfectly to this Kale salad.
Here’s what you’ll need:
1 large, bunch of Kale, de-stemmed
1 avocado, sliced
3 -4 radishes, thinly sliced
half of a cucumber, peeled, seeded and thinly sliced
2 green onions, chopped
2 tablespoons of Miso
4 teaspoons of Maple Syrup
Combine Miso paste and Maple Syrup in a large bowl. Mix with a fork until smooth.
Add Kale leaves to bowl with dressing
Massage the miso-maple mixture into the Kale leaves using your hands, until the leaves soften.
Distribute dressed Kale onto salad plates and garnish with radishes, cucumber, green onion and avocado. Serve and enjoy this super healthy salad.
