There's a little bit of everything in this Kale Chopped Salad and it all works together in a wonderful, clean eating way with a subtle sweetness (from the grapes). I've come to really love this salad. This is an excellent clean eating addition to your own healthy recipe repertoire. Enjoy!
Kale chopped salad
1 small bunch of Kale - sliced into thin slivers.
1/4 of a head of red cabbage - sliced into thin slivers.
7 - 10 red, seedless grapes - halved
2 tablespoons slivered almonds
2 - 3 tablespoons each of black beans and garbanzo beans
2 - 3 tablespoons of cooked quinoa
1 tablespoon of grated parmesan cheese
1/2 of a Roma Tomato, seeded and chopped.
1 small carrot chopped
Red Wine vinaigrette
Clean and slice kale and cabbage. Create a Kale/Cabbage blend.
Place desired amount of Kale/Cabbage blend into a single-serving salad bowl.
Toss salad ingredients until well combined.
Add a few tablespoons of red wine vinaigrette; toss and distribute evenly.
