Every Chicagoan is familiar with Frango Mints. Long associated with the Marshall Fields Department store in downtown Chicago, Frango Mints remain available, thankfully, after the Macy’s takeover. Of course, like everything else these days, Frango Mints are available online.
I love Frango Mints. Love them. I have a cookbook devoted exclusively to Frango Mints. This brownie bite recipe is a fabulous showcase for their subtle mint, heavenly, chocolatey goodness. Let me warn you, the batter is out of this world - try to leave some for baking …
I use those mini paper baking cups in a mini muffin tin for this recipe. You can also simply spray a non-stick pan and bypass the muffin cups. It all comes together quickly in a single mixing bowl. I usually just dust the brownie bites with powdered sugar after they’re completely cooled off. They are also fabulous with a little vanilla ice cream. I am completely defenseless against the batter bowl … no dignity, no restraint, just all in …
Ingredient and Method:
1 stick of butter
15 Frango Mints, chopped coarsely
1 cup of sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 teaspoon instant espresso powder
1/2 cup all purpose flour
1 tablespoon cocoa powder
9 Frango Mints, each cut into sixths
1/8 teaspoon salt
Pre-heat oven to 350 degrees.
Place mini paper baking cups into a 24-portion mini muffin tin.
Place butter and the 15 chopped Frango mints, together, into a good-sized glass bowl.
Microwave in 1 minute increments.
Once butter and chocolate are melted, blend together until smooth.
Allow to cool.
Add in sugar, eggs, vanilla extract, espresso powder, cocoa powder and salt - blending after each addition.
Add 9 additional, chopped Frango Mints and combine.
Add flour and combine.
Divide the batter between the 24 muffin cups.
Bake for 12 minutes. Might take 14 minutes based on your oven.
Allow to cool completely and then dust with powdered sugar.
Heaven awaits and I’m not just referring to the batter … the brownie bites are densely chocolate and slightly chewy - just plain yum!
