Absolute Best Blueberry Banana Bread with Pineapple and Coconut

I ever made…

In a single bowl…

Here’s the ‘how to’ …


½ c of Melted Butter
1 c of Sugar
2c plus 4T of Cake Flour (omit 4T if using all purpose flour)
½ t salt
1 T Ceylon Cinnamon
2 t Baking Powder
½ t Baking Powder
2 eggs
3 Large Bananas
½ c buttermilk
¾ - 1 c chopped candied, toasted pecans
½ T banana flavoring and ½ T vanilla or 1 T vanilla
1 c Coconut
1 c drained, crushed pineapple
1 c fresh blueberries tossed with a tad more cinnamon and flour
Chunky Shimmering Sugar from Williams Sonoma


In a large bowl mash Bananas.
Add drained pineapple and combine.
Add coconut and combine.
Add eggs and combine.
Add Banana and/or Vanilla flavoring and combine.
Add Buttermilk and combine.
Add Cinnamon and combine.
Add Sugar and combine.
Add Melted Butter and combine.

In a smaller bowl, combine flour, baking soda, baking powder and salt and combine.
Add flour mixture to banana mixture and combine.
Add pecans and combine.
Fold in Blueberries.


Lightly grease two loaf pans and divide mixture.
Sprinkle a healthy dose of Shimmering Sugar over both … Go for it – it won’t burn…
Bake at 350 degrees for 45 – 55 minutes.

Trifle-it for Dessert!

Slice Banana Blueberry bread into cubes.

Place in individual serving size bowl.

Micro for 20 seconds to warm it up.

Add a scoop of Vanilla Ice cream.

(I use Tahitian Vanilla Gelato)

Warm up Caramel Sauce and pour over all.

Scatter blueberries, blackberries and strawberries

around mixture.

Top with Whipping cream.
