Slow Cooker Overnight Oatmeal



1 c dry steel-cut (Irish) oats

1 c chopped, dried cranberries

3 c water

1 1/2 c milk

Set this up before you go to sleep

and you'll have breakfast waiting for you.

In a slow cooker combine all of the ingredients.

Cover and cook for 6 -7 hours.

Serve topped with plain or vanilla yogurt.


Slow Cooker Italian Sausage Sandwiches



2 lbs. Italian Sausage links

1 -2 jars favorite spaghetti sauce (Prego)

French bread rolls

Place Sausage in a skillet and just cover with water.

Turn heat up to high and allow to come to a boil.

Turn heat to medium low and cook for 5 minutes.

Drain sausage and place in a slow cooker.

Add a jar of sauce and about a 1/2 c of water

just so that it isn't really thick.

Add more sauce if necessary from second jar

so that sausage is covered in sauce.

Cook on low for 4 -5 hours.

Serve with a bit of sauce in a french roll.


Slow Cooker Maui Chicken



6 boneless, skinless chicken breasts

2 T oil

One 14 1/2 oz. can of chicken broth

20 oz. can of pineapple chunks

1/4 c vinegar

4 T brown sugar

2 T soy sauce

1 green pepper, chopped

Brown chicken in oil. Transfer to slow cooker.

Combine rest of ingredients and pour over chicken.

Cook on low for 4 - 6 hours.

When chicken is cooked, turn up slow cooker to high.

Pour in 3 T cornstarch dissolved in a 1/4 c of water.

Cook for another 10 - 15 minutes or until mixture has slightly

thickened.

Serve over rice.




Slow Cooker Meatball Subs



2 eggs beaten

1/4 c milk

1/2 c bread crumbs

2T grated Parmesan cheese

1/4 t pepper

1/8 t garlic powder

1 1/2 - 2 lbs. ground beef

1 - 2 jars of favorite spaghetti sauce (Prego)

French Bread Rolls

Combine all of the ingredients and shape into 1 inch meatballs.

Sauté or broil meatballs just until browned.

Place in slow cooker.

Pour 1 - 2 jars of sauce over meatballs.

Pour in enough sauce so that meatballs are covered.

Add a bit of water if sauce seems really thick.

Gently mix meatballs and sauce.

Cook on low for 4 - 6 hours.

Serve with a bit of sauce on french rolls.


Slow Cooker Chicken Curry




A variety of chicken pieces: breasts, thighs and legs

Sprinkle the chicken with salt and pepper and place in slow cooker.

Combine the next 7 ingredients and pour over the chicken:

2 T curry

1 garlic clove, minced

3 T melted butter

One 14 1/2 oz. can of chicken broth

2 T onion, chopped fine

1/2 c of peach syrup drained off from a can of peaches

Chopped peaches

Cook on low for 4 - 6 hours.

When chicken is cooked turn slow cooker to high and mix in 3 T

cornstarch that has been dissolved in a 1/4 c of water.

Cook for 10 - 15 minutes or until chicken curry mixture has

thickened. Serve over rice with optional condiments such as:

chopped peanuts, shredded coconut, and pineapple chunks.




Slow Cooker B-B-Q Chicken Thighs



6 - 8 skinless, boneless chicken thighs

1 c flour

1 t salt

1/2 t pepper

1 t paprika

Combine flour and seasonings.

Dredge chicken thighs in flour and set aside.

Heat 3 T of oil in a skillet and quickly sauté chicken thighs

until lightly browned.

Place chicken in slow cooker.

Pour a bottle of B-B-Q sauce over chicken and gently

mix sauce and chicken. Cook on low for 4 -5 hours.
