Chopped Salad




2 heads of Romaine Lettuce - chopped

1/2 of a cucumber - peeled, seeded and chopped

2 radishes - peeled and chopped

1 yellow pepper - chopped

1/4 of a red onion - chopped

2 green onions - chopped

6 - 8 fresh basil leaves - rolled in a stack, sliced and chopped

8 large cherry tomatoes - chopped

1/4 c chopped carrots

1/4 c chopped, pitted Kalamata olives

4 artichoke hearts - chopped

1/4 c crumbled feta cheese



Dressing:

4 T red wine vinegar

4 T olive oil

1/2 t salt

1/4 t pepper

Pour dressing ingredients into a mason jar, tighten lid and shake.

6 - 8 baked pita chips crumbled

Combine fresh chopped ingredients in a bowl and refrigerate until needed.

Prepare dressing and refrigerate until needed.

Just before serving add pita chips and dressing and mix.
