Chicken Salad Extraordinaire




The following recipe includes directions for a fresh, light, side salad that can be served together for a complete meal. It's the perfect dinner for a hot, summer night! My good friend Heather is responsible for this fantastic combination. I first enjoyed this meal on a summer afternoon as my daughter and I had lunch with Heather and her daughter at their home.

Dressing:

1 c mayonnaise 2 t apple cider vinegar

6 t honey

pinch each of salt and pepper

Salad:

One rotisserie chicken - remove and chop meat

3/4 c pecan pieces - toasted or use pecans that have already been toasted and candied - available at Trader Joe's - (yum)

2 c seedless red grapes, halved

2 stalks of celery, finely chopped

Mix all everything together and fill croissants with the chicken salad.

Side Salad:

I served the chicken salad croissants with a salad made with fresh baby greens, sliced strawberries, sliced avocado, sliced peaches, blueberries, more candied pecans and perlini (fresh mozzarella pearls) and a raspberry dressing.
