Chopped Barbeque Chicken Salad
This salad is a perfect use for leftover Barbeque chicken. In fact, whenever we do make BBQ chicken on the grill, I always add a few extra chicken breasts so that we can have this salad the following day. If you're fresh out of BBQ chicken, just pick up a roasted chicken from the deli.
Dressing:
I always use bottled Catalina dressing for this salad. The flavor complements the southwestern salad ingredients and the BBQ chicken perfectly.
Salad:
1 can black beans, drained and rinsed
2 c cooked, chopped chicken (BBQ chicken if you've got it)
1 cup corn kernels
1 c chopped green pepper
broken tortilla chips
(Available at the grocer's in the produce section is a product
put out by 'Fresh Gourmet' called 'Tortilla Strips' and they
work great for this salad if you can find them)
sliced radishes ( it's a matter of taste - I added them )
1/2 c chopped red onion or chopped green onions - your choice.
1 cucumber peeled, seeded and chopped
1 large tomato, cored, seeded and chopped
3 heads of Romaine lettuce cleaned and chopped
Combine and toss chicken, vegetables and salad greens. Right before serving, toss salad with dressing and tortilla chips.
