Asian Shrimp Wraps with dipping sauce
2 heads of boston lettuce cleaned and seperated.
Grated carrots
Minced fresh herb of choice: basil, mint or parsley
Chopped cashews
1 pound of shrimp, shelled and deveined
Step one:
Marinate shrimp in 4 T soy sauce, 2 t sesame oil, 2 T rice vinegar, 1 T peeled and grated fresh ginger.
Step two:
Combine following ingredients for dipping sauce: 3 T rice wine vinegar, 1/4 c soy sauce, 1/2 t sugar, 1 scallion finely chopped and 1 t sesame oil.
Step three:
Prepare marinated shrimp in grill pan or sauté pan and keep warm.
Step four:
Assemble wraps. Place 3-4 shrimp on a open boston lettuce leaf,
add grated carrots, minced herbs and chopped cashews. Drizzle a small amount of dipping sauce over all and serve.
