Artichoke Dip



2 T butter

1/2 c finely chopped onion

3 cloves garlic, minced

1 c chopped spinach (thaw frozen chopped spinach and squeeze out excess liquid)

3 cans artichokes hearts in water. Drain artichokes and coarsely chop. (have an extra can on hand in case you want to add more)

One 8 oz. Block of cream cheese, softened

1/2 c mayonnaise

2 c shredded colby jack cheese (add more if you want)

1/2 c parmesan cheese

Melt butter in pan add chopped onion and garlic and cook for 3 minutes or until transclucent. Add chopped spinach and cook for another 3 minutes. Remove from heat and add artichokes and mix together. Add cream cheese, mayonnaise, colby jack and parmesan cheese. Transfer mixture to greased casserole dish. Bake at 350 degrees for about 40 minutes. Serve warm with pita chips.
